Nuevo Leon’s Restaurant Sector Expects Sales Boost During Lent

Nuevo Leon’s restaurant sector anticipates a 25%-30% sales boost during Lent, as seafood establishments prepare for increased demand driven by local traditions, reports the National Chamber of the Restaurant and Seasoned Food Industry (CANIRAC). The industry is also focusing on professionalization and plans to enhance training and innovation to meet evolving demands.

During a press conference, CANIRAC said that its members are ready to welcome all diners looking for seafood during Lent. The organization estimates that during this period, sales will increase by 25%-30%, translating into an economic boost ranging between MX$400 million (US$19.7 million) and MX$416 million.

Kathia Guajardo, President, CANIRAC in Nuevo Leon, highlights that Lent is a key season for seafood restaurants in the state: “We expect an increase in sales at these establishments across the region.” 

Nuevo Leon has 21,000 restaurants of various types, of which 744 specialize in seafood. These establishments offer a variety of products such as shrimp, octopus, tilapia fillets, oysters, and scallops, among others. According to CANIRAC, 85.3% of the seafood cooked in the state is sourced nationally, while 14.7% comes from international markets. Guajardo encouraged restaurant owners to prioritize local industry to ensure the quality and freshness of their dishes, while maintaining competitive prices that do not negatively impact diners' budgets.

Guajardo adds that the season presents a logistical challenge for restaurant owners, who implement measures to guarantee the freshness and safety of their food. For example, a food handling training course was held this week in collaboration with the Ministry of Health, which aimed to provide updated tools on food safety protocols and best practices within the restaurant industry.

Professionalization in the Restaurant Sector

According to the Guajardo, one of the biggest challenges and opportunities for the sector is professionalization. She pledged to drive innovation and continuous training on culinary trends and social needs, such as sustainability, inclusion, and corporate responsibility. CANIRAC, she adds, will train its staff in English to provide high-quality service in preparation for the FIFA World Cup 2026. The training will focus primarily on waiters and hosts, aiming to enhance the experience for visitors passing through Nuevo Leon during the event.

"Through the chamber, we have just secured a partnership with Tálisis. They will support us in preparing waiters, hosts, and all operational restaurant staff. This course will be certified, offered at an affordable cost, and will strengthen the industry. The training will last approximately a year and a half, ensuring we are ready for the World Cup," says Guajardo.
